To prepare stewed peas with speck, start by placing a pot of water on the stove and keeping it warm so you can add it to the peas during cooking as needed.
Clean and finely chop the spring onion, and cut the speck into small pieces (or cubes). Place a pot on the stove with olive oil, and add the chopped spring onion and speck to sauté until golden. Then, add the peas and, over low heat, stir for a few minutes until the peas become tender.
Salt the peas and add a ladle of hot water. Then, over low heat, continue cooking, covering the pot with a lid, leaving a small vent. Add hot water gradually as the peas dry out, until fully cooked. Season to taste with salt, pepper, and a generous grind of nutmeg.
Serve the stewed peas with speck piping hot!
