Production of smoked, flat or stewed pancetta

The Bomè cured meat factory’s range of specialities contains a variety of very delicate, refined pancettas including sweet flat pancetta, smoked pancetta, made using natural smoke and juniper berries, and stewed pancetta, obtained through careful selection of the leanest parts which are then salted, flavoured and steamed.

The products are intended for consumption after slicing and do not contain allergens, gluten, milk products or GMOs.

An interesting fact

The pancetta has the following certification: IFS. Today, depending on the type of processing, it is exported to Canada, Europe, Japan, Hong Kong, New Zealand, the United Kingdom and Switzerland.

Production of the smoked pancetta begins with the selection of the best “Delikatesse-quality” pork. The pancetta is then prepared as per Bomè tradition, dry-salted with salt, sprinkled with spices and flavourings, placed in vats and left to rest. Depending on the desired product and taste, they are then either smoked or stewed.

Smoked pancetta accompanies the best Italian dishes and is excellent for breakfasts and brunches.
